  • 0. Bring a pot of water and half a tablespoon of salt to a boil to cook the rice. Once the water boils, add the rice and stir.
  • 1. Meanwhile, clean the asparagus, removing the tough, woody part of the stem, and wash them thoroughly. Tie them into a bunch and place them in a tall pot filled with water and a pinch of salt, keeping the asparagus tips out of the water. Cook for 15-20 minutes.
  • 2. In a saucepan, quickly prepare a cream with 200 ml of cream, the juice of one lemon, 3 tablespoons of grated Parmesan cheese, and a sprinkling of pepper. Mix everything together gently. Make sure the cream is not too thick, but rather runny.
  • 3. Drain the asparagus and separate them, being careful not to break them too much. Arrange them on a plate and sprinkle with grated Parmesan cheese.
  • 4. Once the rice is ready, drain it and add it to a large pan. Add the cream and, if necessary, a knob of butter to combine. Finally, add the asparagus and stir gently. Serve garnished with grated lemon peel or very thinly sliced lemon zest.
