Risotto asparagi e limone: cremoso, fresco e profumato, un connubio perfetto di primavera che risveglia i sensi a ogni forchettata!
Ingredients
- Asparagus500 g
- Carnaroli rice400 g
- Cooking cream200 ml
- Butter20 g
- Grana Padano5 tablespoons
- Lemon1 u (85 g)
- Lemon zestto taste
- Black pepperto taste
- Fine saltto taste
Procedure
0. Bring a pot of water and half a tablespoon of salt to a boil to cook the rice. Once the water boils, add the rice and stir.
1. Meanwhile, clean the asparagus, removing the tough, woody part of the stem, and wash them thoroughly. Tie them into a bunch and place them in a tall pot filled with water and a pinch of salt, keeping the asparagus tips out of the water. Cook for 15-20 minutes.
2. In a saucepan, quickly prepare a cream with 200 ml of cream, the juice of one lemon, 3 tablespoons of grated Parmesan cheese, and a sprinkling of pepper. Mix everything together gently. Make sure the cream is not too thick, but rather runny.
3. Drain the asparagus and separate them, being careful not to break them too much. Arrange them on a plate and sprinkle with grated Parmesan cheese.
4. Once the rice is ready, drain it and add it to a large pan. Add the cream and, if necessary, a knob of butter to combine. Finally, add the asparagus and stir gently. Serve garnished with grated lemon peel or very thinly sliced lemon zest.
