  • 0. If using dried lentils, rinse them under running water and boil them in plenty of salted water until soft but still firm. If using pre-cooked lentils, rinse them and set aside.
  • 1. In a large saucepan, heat the extra virgin olive oil and sauté the finely chopped onion with the whole garlic clove.
  • 2. Peel and roughly chop the potatoes, then add them to the sauté pan. Cook for a few minutes, stirring.
  • 3. Pour in the hot vegetable broth and cook the potatoes for about 10-15 minutes, until they start to become soft.
  • 4. Add the rice and lentils, mix well and continue cooking over medium heat, adding hot broth if necessary, until the rice is al dente.
  • 5. Season with salt and pepper to taste, remove the garlic clove, and turn off the heat.
  • 6. Let the rice, potatoes, and lentils rest for a few minutes before serving, so that the flavors can meld together. If desired, add a sprinkle of chopped fresh parsley.
