Ingredients
- Vegetable broth1.5 L
- Roma rice250 g
- Lentils (dried)200 g
- Extra virgin olive oil3 tablespoons
- Yellow potatoes3 u (600 g)
- Golden onion1 u (150 g)
- Garlic1 clove
- Black pepperto taste
- Fine saltto taste
- Parsleyto taste
Procedure
0. If using dried lentils, rinse them under running water and boil them in plenty of salted water until soft but still firm. If using pre-cooked lentils, rinse them and set aside.
1. In a large saucepan, heat the extra virgin olive oil and sauté the finely chopped onion with the whole garlic clove.
2. Peel and roughly chop the potatoes, then add them to the sauté pan. Cook for a few minutes, stirring.
3. Pour in the hot vegetable broth and cook the potatoes for about 10-15 minutes, until they start to become soft.
4. Add the rice and lentils, mix well and continue cooking over medium heat, adding hot broth if necessary, until the rice is al dente.
5. Season with salt and pepper to taste, remove the garlic clove, and turn off the heat.
6. Let the rice, potatoes, and lentils rest for a few minutes before serving, so that the flavors can meld together. If desired, add a sprinkle of chopped fresh parsley.
