  • 0. Preheat the oven to 180°C and grease and flour two 20-22cm round cake pans. In a large bowl, combine the flour, sugar, cocoa powder, and salt.
  • 1. In another bowl, whisk together the eggs, oil, buttermilk, vanilla extract, and red food coloring (about two tablespoons). Add the wet ingredients to the dry ingredients and mix until smooth.
  • 2. In a small cup, whisk together the baking soda and vinegar until frothy, then immediately add to the batter, stirring well. Divide the batter evenly between the two prepared pans and smooth it out with a spatula.
  • 3. Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool on the pans for a few minutes, then transfer them to a wire rack to cool completely.
  • 4. Now you can move on to the cream cheese: In a large bowl, beat the cream cheese and butter until creamy. Add the powdered sugar and vanilla extract and continue beating until smooth and fluffy.
  • 5. Once the cakes are completely cooled, trim the tops if necessary to make them flat. Place one of the cakes on a serving plate and spread a layer of cream cheese on top.
  • 6. Place the second cake on top and spread the remaining cream cheese over the top and sides of the cake. Decorate as desired with cake crumbs, chocolate shavings, or other decorations, such as red berries.
