Risotto al radicchio cremoso e aromatico, preparato con il Bimby. Un piatto autunnale dal gusto intenso, semplice e veloce da realizzare.
Ingredients
- Vegetable broth700 ml
- Radicchio250 g
- Roma rice220 g
- Red wine50 ml
- Shallot50 g
- Parmigiano Reggiano DOP50 g
- Butter25 g
- Extra virgin olive oilto taste
- Walnutsto taste
- Black pepperto taste
- Fine saltto taste
Procedure
0. Wash the radicchio and cut it into strips. Peel the shallot, add it to the bowl, and chop for 30 seconds at speed 5.
1. Add a drizzle of oil and sauté for 3 minutes at 100°C, counterclockwise, speed 1. Add the radicchio and cook for 2 minutes at 100°C, counterclockwise, speed 1.
2. Add the rice and toast it for 2 minutes, Varoma temperature, counterclockwise, always speed 1. Deglaze with the red wine: 1 minute, Varoma temperature, counterclockwise, speed 1.
3. Season with salt and pepper, add broth until the rice is covered, and cook, adding more broth if necessary: about 12 minutes, depending on the rice, at 100°C, counterclockwise, speed 1.
4. Once cooked, add the butter and Parmesan and mix for 1 minute counterclockwise, speed 1. Plate, garnish with chopped walnuts and a few strips of fresh radicchio, and serve.
