  • 0. Peel and dice the pumpkin. Place the pumpkin cubes in a pan with a drizzle of extra virgin olive oil. Cover with water and cook for 10-15 minutes. After the pumpkin has cooled, mash it with a fork or potato masher and transfer it to a bowl.
  • 1. Add the egg and flour, a little at a time, then add a pinch of salt. Mix until the mixture becomes quite thick, almost sticky. Adjust the amount of flour according to the consistency of the mixture.
  • 2. Meanwhile, bring a pot of salted water to a boil and melt the butter in a pan along with the sage leaves. Shape the gnocchi using a spoon, first dipping it into the boiling salted water and then dropping the gnocchi into it. When the gnocchi float to the surface, drain them and add them to the pan with the melted butter.
  • 3. Toss the gnocchi with the sauce for a minute. Finish with a sprinkling of grated cheese and serve the pumpkin gnocchi piping hot!
