- Pumpkin750 g
- Vegetable broth500 ml
- Yellow potatoes200 g
- Golden onion50 g
- Extra virgin olive oil30 ml
- Fine saltto taste
Procedure
0. Add the onion and oil to the jug and cook for 3 minutes at 100°C, speed 4. Remove the peel and seeds, then cut the pumpkin pulp into small pieces, add it to the jug and turn the blender on high. Peel the potatoes and cut them into slices, add them to the jug along with the broth and cook for 20 minutes at 100°C, speed 1.
1. At the end of cooking, add a knob of butter and cook for 40 seconds at speed 6. Serve with croutons.
