- Cow ricotta125 g

Procedure
0. Start by cleaning the pumpkin and cutting it into chunks. Make a broth with the pumpkin peel, adding a little stock cube, rosemary, and chili pepper.
1. Sauté the pumpkin in a pan with extra virgin olive oil, parsley, and a pinch of salt. After 5 minutes, add the broth. Adjust the broth amount according to your desired consistency.
2. After about fifteen minutes, or when the pumpkin has softened, add the ricotta. After five minutes, blend everything with an immersion blender until smooth. Serve with croutons!
