  • 0. In a bowl, combine the ricotta, feta, parmesan, and chopped parsley. Season with salt and pepper to taste, but remember that feta is already quite flavorful.
  • 1. Roll out the puff pastry on a lightly floured surface. Cut into squares (about 10x10 cm). Place a generous spoonful of filling in the center of each square. Close the square by bringing the opposite edges together, forming a sort of bag or sandwich. Make sure the edges are well sealed.
  • 2. Place the rolls on a baking sheet lined with parchment paper. Brush the surface with beaten egg to ensure even browning. Bake in a preheated oven at 200°C (400°F) for about 15-20 minutes, or until the rolls are puffed and golden brown.
