- Manitoba flour500 g
- Water300 ml
- Baking soda100 g
- Butter25 g
- Dry yeast7 g

- Eggs1 u (60 g)
Procedure
0. In a large bowl, dissolve the yeast and sugar in the warm water and let it sit for about 5 minutes, until it begins to foam. Add the flour, salt, and butter. Knead until the dough is smooth and elastic, about 7-10 minutes. You can knead by hand or with a mixer.
1. Place the dough in an oiled bowl, cover with a cloth, and let it rise in a warm place for an hour, or until doubled in size.
2. Take the risen dough and divide it into 12 equal pieces. Roll each piece into a long rope and form a pretzel. To do this, shape the rope into an upside-down U, cross the ends, and press them onto the bottom of the U to secure them.
3. Bring the water and baking soda to a boil. Boil each pretzel for 30 seconds per side, then remove them with a slotted spoon and place them on a baking sheet lined with parchment paper.
4. Preheat the oven to 220°C. Brush the pretzels with beaten egg and sprinkle with coarse salt. Bake in the preheated oven for 12-14 minutes, or until golden brown.
5. Serve pretzels warm or at room temperature. They're great on their own or with dips like mustard or melted cheese.
