Patate grattugiate, strizzate e mescolate con sale e pepe, poi schiacciate in padella calda fino a diventare croccanti fuori e morbide dentro.

  • 0. Grate the potatoes. If you want them softer, you can boil them for 2-3 minutes.
  • 1. In a bowl, combine the beaten eggs, Parmesan cheese, parsley, salt, pepper, and potatoes. Mix vigorously.
  • 2. Add a generous amount of butter to a nonstick pan. Pour in the batter (I recommend a 2cm thickness so they stay crispy). After about 5 minutes, flip the roast and let it crisp on the other side.
