Ingredients
- Potato gnocchi500 g
- Frozen spinach200 g
- Peas (precooked)100 g
- Parmigiano Reggiano DOP3 tablespoons
- Carrots2 u (150 g)
- Artichoke1 u (250 g)
- Fine saltto taste
- Extra virgin olive oilto taste
Procedure
0. Start by cleaning the artichokes, removing the toughest leaves, cutting off the tips, removing the beard, cutting them into thin slices, and placing them in a bowl with water and lemon juice. Peel the carrots and cut them into rounds. Cook them in a pan with a drizzle of extra virgin olive oil over medium heat.
1. Next, add the artichokes. Cook for 10 minutes, adding a splash of water. Meanwhile, cook the potato gnocchi in the pot with water.
2. Add the drained peas and frozen spinach to the pan and cook until the spinach is thawed. Finally, add the gnocchi, mix everything together, and pour them into a lightly greased baking dish.
