Ingredients
- Yellow potatoes500 g
- Chickpea flour30 g
- Parmigiano Reggiano DOP30 g
- Breadcrumbs2 tablespoons
- Eggs1 u (60 g)
- Extra virgin olive oil1 tablespoon
- Fine saltto taste
- Nutmegto taste
Procedure
0. Mash the boiled potatoes until smooth. Add the chickpea flour, Parmesan cheese, egg, salt, pepper, and a pinch of nutmeg. Mix well until the mixture is soft but workable.
1. Take small portions of dough (about 40 g each) and shape them into disks 5 cm in diameter and 1 cm high. If the dough is too sticky, lightly moisten your hands with water. Coat them in breadcrumbs.
2. Heat a nonstick pan and brush it with a drizzle of extra virgin olive oil. Arrange the fritters and cook them over medium heat for about 3-4 minutes per side, until golden and slightly crispy.
3. Serve the pancakes hot, accompanied by a light yogurt sauce or a vegetable cream.
