  • 0. Place the unpeeled yellow potatoes, preferably organic and medium-sized, in a large pot. Fill the pot with water but not to the brim to prevent the water from spilling out. Boil the potatoes until a fork easily enters the inside of the potato.
  • 1. Remove them from the pot, arrange them on a plate, and let them cool until they're cool enough to handle and peel. Mash the potatoes with a fork or a food mill using the large holes.
  • 2. To the bowl with the mashed potatoes, add the whole eggs, a pinch of salt, ground pepper, and grated Parmesan cheese. Mix with your hands until all the ingredients are combined and a soft dough forms.
  • 3. Form the dough into balls and work them with your hands to obtain the desired shape. Then, roll them in gluten-free breadcrumbs and arrange them on a plate with the other balls. For best results, let them firm up in the refrigerator for at least 10 minutes.
  • 4. Fry the croquettes in a pan with plenty of seed oil, turning them carefully to ensure they are golden brown on all sides. Serve hot, but they're also delicious cold.
