Le #polpette di patate e funghi sono un’alternativa vegetariana dal gusto avvolgente e #delicato. L’impasto, a base di patate lesse schiacciate e funghi trifolati, viene arricchito con erbe aromatiche e formaggio per una consistenza morbida e un sapore intenso. Dorate al forno, in padella o in friggitrice ad aria, sono perfette da servire come antipasto, secondo piatto o sfizioso finger food.
Ingredients
- Field mushrooms500 g
- New potatoes500 g
- Parmigiano Reggiano DOP50 g
- Breadcrumbs25 g
- Eggs1 u (60 g)
- Parsleyto taste
- Fine saltto taste
- Extra virgin olive oilto taste
- Black pepperto taste
Procedure
0. Start by cleaning and washing the mushrooms. Finely chop them and sauté them in a pan with oil, salt, and parsley. Add a minced garlic clove if desired.
1. Meanwhile, peel the potatoes and chop them roughly. Boil them in salted water for about 10-12 minutes. Drain the potatoes.
2. In a bowl, mash the potatoes with a pinch of salt, pepper, an egg, the mushrooms, the breadcrumbs, and the grated cheese.
3. Shape the balls and cook in an air fryer at 220°C for 15/20 minutes.
