  • 0. For the syrup: Slowly heat the juice of two oranges, a cinnamon stick, and the sugar in a saucepan, then boil briefly to obtain a smooth syrup. Strain and cool. It's important to prepare the syrup ahead of time and pour it cold over the warm cake.
  • 1. Preheat the oven to 140°C. Butter a 23cm springform pan and dust it with flour. Dry the filo sheets in the oven for 20 minutes, let them cool on a rack, and then crumble them.
  • 2. Increase the oven temperature to 210°C. Combine the remaining cake ingredients and a pinch of salt in a bowl and mix well, then add the crumbled filo sheets. Pour into the pan, place in the lower third of the oven, and bake for 35-40 minutes, or until a skewer inserted into the center comes out clean.
  • 3. Prick the entire surface of the cake with a skewer and decorate with orange slices. Immediately pour in the cold syrup. Cover the cake to keep it warm and absorb the syrup quickly. Cool, then chill overnight. Serve cold with Greek yogurt or vanilla ice cream.
