  • 1. Place the pomegranate seeds and lemon zest in a glass jar with an airtight lid. Add the alcohol and seal the jar. Let it steep in a cool, dark place for about 2 weeks, shaking the jar daily.
  • 2. During maceration, alcohol extracts aromatic compounds and pigments (anthocyanins) from the pomegranate seeds and lemon peel. Alcohol is an excellent solvent for these compounds because it solubilizes them better than water.
  • 3. After 2 weeks, prepare a syrup by dissolving the sugar in water over medium heat. Bring to a boil and simmer for 5 minutes. Let the syrup cool completely.

  • 6. Filtering removes solids that could affect the clarity and final flavor of the liqueur. Mixing with sugar syrup creates a balance between alcohol and sweetness.
  • 7. Pour the liqueur into clean glass bottles. Let the liqueur rest for at least a month in a cool, dark place.
  • 8. Resting allows the flavors to blend and mature. During this period, polymerization and controlled oxidation reactions occur, harmonizing the liqueur's flavor.
