- Parmigiano Reggiano DOP50 g
- Pork cheek50 g
- Butter10 g
- Extra virgin olive oilto taste
- Rosemaryto taste

- Fine saltto taste
Procedure
0. Clean and peel the pumpkin. Use the peel to make a broth by adding water, salt, and rosemary. Dice the pumpkin and sauté it in a pan with salt and pepper. Cook for about 15 minutes. Then, transfer the pumpkin to a bowl and mash it with a fork to make a cream.
1. Use the strained broth to cook the polenta (add the remaining water), and when it boils, add the salt and flour. Cook the polenta. Once cooked, stir in the cheese, butter, and pumpkin puree. Finish the dish with crispy guanciale!
