Ingredients
- Prawns200 g
- Venere rice160 g
- Feta80 g
- Soy sauce2 tablespoons
- Extra virgin olive oil1 tablespoon
- Zucchini1 u (200 g)
- Black pepperto taste
- Limeto taste
Procedure
0. Rinse the rice thoroughly under running water to remove any impurities, then cook it in plenty of salted water for the cooking time indicated on the package, or until tender but still slightly al dente. Drain, drizzle with a drizzle of oil, and let it cool. Its dark color and toasted aroma will be the perfect base for your poké.
1. Heat a nonstick pan with a drizzle of oil and, when hot, add the shrimp. Sauté for 3 minutes, turning them until they're lightly golden and juicy. Add a tablespoon of soy sauce to enhance their flavor and turn off the heat.
2. In the same pan, without adding any more oil, add the courgettes cut into sticks and sauté them over high heat for 2 minutes, just long enough for them to be golden on the outside but still crunchy on the inside.
3. Divide the Venere rice among bowls and top with the seared shrimp, crispy zucchini, and crumbled feta. Drizzle with a squeeze of lime and a sprinkle of black pepper.
