  • 0. Preheat oven to 180°C (350°F). Line a loaf pan with parchment paper.
  • 1. Wash and peel the pears, leaving them whole and with the stems, only removing the bottoms if necessary to make them even. Leave the cores intact to achieve a striking visual effect when cut.
  • 2. In a bowl, sift together the amaranth flour, almond flour, cocoa powder, baking powder, salt, and cinnamon. Mix well.
  • 3. In another bowl, whisk the eggs and sugar until frothy. Gradually whisk in the oil, then the plant-based milk.
  • 4. Pour the liquids into the dry ingredients. Mix with a spatula until the mixture is smooth but not too runny.
  • 5. Pour half the batter into the pan. Carefully arrange the pears upright, neatly aligned. Cover with the remaining batter, leaving the stems exposed.
  • 6. Bake at 180°C for about 45-50 minutes. Check for doneness by inserting a toothpick into the sides (not into the pears). It should come out clean.
  • 7. Let it cool completely before unmold. When you cut it, you'll get slices with the whole pear in the center: a real eye-catcher!
