- Amaranth flour150 g
- Almond milk120 ml
- Whole cane sugar100 g
- Sunflower oil80 ml
- Almond flour50 g
- Unsweetened cocoa powder30 g
- Baking powder16 g
- Williams pears3 u (600 g)
- Eggs2 u (120 g)
- Fine saltto taste
Procedure
0. Preheat oven to 180°C (350°F). Line a loaf pan with parchment paper.
1. Wash and peel the pears, leaving them whole and with the stems, only removing the bottoms if necessary to make them even. Leave the cores intact to achieve a striking visual effect when cut.
2. In a bowl, sift together the amaranth flour, almond flour, cocoa powder, baking powder, salt, and cinnamon. Mix well.
3. In another bowl, whisk the eggs and sugar until frothy. Gradually whisk in the oil, then the plant-based milk.
4. Pour the liquids into the dry ingredients. Mix with a spatula until the mixture is smooth but not too runny.
5. Pour half the batter into the pan. Carefully arrange the pears upright, neatly aligned. Cover with the remaining batter, leaving the stems exposed.
6. Bake at 180°C for about 45-50 minutes. Check for doneness by inserting a toothpick into the sides (not into the pears). It should come out clean.
7. Let it cool completely before unmold. When you cut it, you'll get slices with the whole pear in the center: a real eye-catcher!
