I pizzoccheri alla Valtellina sono un piatto tradizionale della Lombardia, in particolare della Valtellina, molto ricco e saporito, perfetto per i mesi più freddi.
Ingredients
- Fresh pizzoccheri500 g
- Yellow potatoes250 g
- Casera200 g
- Savoy cabbage200 g
- Parmigiano Reggiano DOP100 g
- Butter100 g
- Garlic2 cloves
- Black pepperto taste
- Fine saltto taste
Procedure
0. Preparing the vegetables: Clean the cabbage and cut it into strips. Peel the potatoes and dice them.
1. Cooking: Bring a large pot of salted water to a boil. Add the potatoes and cook for about 5 minutes. Then, add the pizzoccheri and cabbage. Cook everything together for about 10-15 minutes, or until the pizzoccheri are al dente.
2. Cheese and seasoning: Meanwhile, cut the Casera cheese into thin slices. In a pan, melt the butter and add the garlic to flavor.
3. Assembly: Drain the pizzoccheri with the vegetables and transfer them to a baking dish, alternating layers of pasta, cabbage, potatoes, and cheeses (Casera and Parmesan). Drizzle a little melted garlic butter between each layer.
4. Finishing: Top with a final layer of cheeses and melted butter. Place the dish in a hot oven to broil for a few minutes, until the cheese melts and forms a golden crust.
5. Serving: Serve the pizzoccheri piping hot, sprinkled with black pepper if desired.
