Ingredients
- Type 0 flour400 g
- Water240 ml
- Dry yeast7 g
- Extra virgin olive oil2 tablespoons
- Granulated sugar1 teaspoon
- Fine salt1 teaspoon
Procedure
0. In a small bowl, dissolve the yeast and sugar in half the warm water. Let it sit for 10 minutes until foamy.
1. In a large bowl (or in a stand mixer), combine the flour and salt. Add the activated yeast, the remaining water, and the oil. Knead for 10 minutes until the dough is smooth and elastic.
2. Cover with a damp cloth and let rise in a warm place for about 1 1/2 hours, or until doubled in size.
3. Divide the dough into 6 equal balls. Roll them out on a lightly floured surface with a rolling pin, forming discs about 18–20 cm in diameter and 4–5 mm thick.
4. Heat a nonstick or cast iron skillet (preferably with a lid) very well. Cook one pita at a time, 1–2 minutes per side, until puffed and lightly golden. If you want them to puff up, creating a "pocket" inside, cover with a lid and avoid poking them.
5. For an even softer version, add 1 tablespoon of plain yogurt to the batter. You can also bake them in a convection oven at 250°C for 5–6 minutes on a preheated baking sheet.
