Ingredients
- Whole wheat flour500 g
- Water375 ml
- Pumpkin200 g
- Sicilian Pecorino150 g
- Radicchio125 g
- Fresh yeast10 g
- Sunflower seeds10 g
- Fine salt10 g
- Flaxseeds10 g
- Extra virgin olive oil4 tablespoons
- Yellow potatoes2 u (400 g)
- Honey1 tablespoon
- Rosemaryto taste
- Black pepperto taste
Procedure
0. Dissolve the brewer's yeast in a little warm water with the sugar and let it rest for about 10 minutes.
1. In a large bowl, mix the whole wheat, oat, and rye flours.
2. Add the flax and sunflower seeds, mixing them well with the flours.
3. Add the oil and salt, continuing to knead for 10-15 minutes, until the dough is smooth and elastic. Cover the bowl with a cloth and let the dough rise for about 4 hours.
4. Dice the potatoes. Blanch them in salted water until tender but still firm. This will take about 7 minutes. Drain and season with a tablespoon of olive oil, salt, and rosemary.
5. Clean the pumpkin and cut it into strips. In a pan, melt a little butter and add the rosemary. Sauté the pumpkin with salt and pepper until golden and soft.
6. Chop the radicchio into pieces. Sauté it in a pan with a drizzle of oil and a tablespoon of honey until soft.
7. Preheat the oven to 250°C (even better if you have a pizza stone). Roll out the dough on a lightly greased baking sheet or parchment paper, forming the classic oval, irregular pinsa shape. Top with the squash, potatoes, radicchio, and cheese.
8. Bake for about 15-20 minutes or until crispy!
