Questo cavolfiore sott’aceto è perfetto come antipasto, accompagnamento a piatti di carne o pesce, oppure come parte di un tagliere di salumi e formaggi.
Ingredients
- White wine vinegar500 ml
- Water500 ml
- Rosemary50 g
- Fennel seeds5 g
- Garlic4 cloves
- Granulated sugar2 tablespoons
- Black pepper1 teaspoon
- Cauliflower1 u (1250 g)
- Coarse salt1 teaspoon
Procedure
0. Wash the cauliflower thoroughly and cut it into small florets, trying to keep similar pieces for even cooking.
1. Bring a pot of salted water to a boil. Add the cauliflower florets and cook for about 3-4 minutes. They should be slightly softened but still crunchy. Drain immediately and transfer to a bowl of cold water and ice to stop the cooking process. Once cooled, drain well.
2. In a saucepan, bring equal parts white wine vinegar and water to a boil. Add the salt, sugar (if using), peppercorns, and fennel seeds. Cook for 5 minutes.
3. Meanwhile, sterilize the glass jars. Place them in boiling water for 10 minutes or use an oven sterilization method.
4. In each sterilized jar, layer the cauliflower, garlic slices, and rosemary sprigs. Try to distribute the herbs evenly.
5. Pour the boiling brine over the cauliflower, covering the florets completely. If you'd like to preserve the cauliflower in oil, leave about 2 cm of space at the top and fill the jar with extra virgin olive oil until the cauliflower is completely covered.
6. Seal the jars with sterilized lids and let them cool to room temperature. Store the jars in a cool, dark place for at least 2 weeks before consuming, to allow the flavors to fully develop.
