  • 0. Rinse the potatoes thoroughly under running water. It's not necessary to peel them before cooking, as the skin will protect them during cooking. Cook the potatoes in plenty of salted water (add a tablespoon of coarse salt) and boil for about 30-40 minutes, until the potatoes are soft and can be easily pierced with a fork.
  • 1. Drain the potatoes and let them rest for a few minutes to evaporate excess moisture. While they're still warm, peel the potatoes (the skins will come off easily) and mash them with a potato masher (preferably by hand, for a finer consistency). Avoid using a blender, as you risk obtaining a sticky, rubbery puree.
  • 2. Transfer the mashed potatoes to a saucepan and heat over low heat. Heat the milk (or cream) in a separate saucepan, but do not boil. Add the butter, cut into pieces, to the hot mashed potatoes, stirring gently until fully incorporated.
  • 3. To make the puree even smoother and more velvety, pass it through a fine-mesh strainer or sieve. This removes any lumps and creates an irresistible texture. If necessary, add a little more milk to achieve the desired consistency. The puree should be soft, but not too runny.
  • 4. Season with salt and pepper to taste. For an extra touch, you can grate a little nutmeg. Continue stirring the puree until it becomes creamy and smooth.
  • 5. Serve the mashed potatoes piping hot, perhaps accompanied by a plate of grilled meat or vegetables.
  • 6. Chef's Tip: If you want an even richer and smoother puree, you can replace part of the milk with fresh cream and add a tablespoon of grated cheese (such as Parmigiano or Grana Padano) for a more intense flavor. You can also mix the puree with a little extra virgin olive oil for a Mediterranean flavor!
