Crostata di pesche fresca e profumata, con pasta frolla friabile e succose pesche di stagione. Un dolce estivo irresistibile e genuino.
Ingredients
- Coconut milk350 ml
- Peaches350 g
- Type 00 flour180 g
- Granulated sugar70 g
- Almond milk45 ml
- Sunflower oil40 ml
- Brown sugar40 g
- Coconut flour40 g
- Baking powder4 g
- Blueberriesto taste
- Jamto taste
Procedure
0. For the pastry: In a bowl, combine the flour, cornstarch, baking powder, and sugar. Add the almond milk and oil and knead until smooth and easily workable. Roll out the dough with a rolling pin and line a 20 cm cake pan with parchment paper. Arrange the pastry in the pan and bake at 180°C for 20 minutes, covering it with a sheet of parchment paper.
1. For the cream: Place the sugar, coconut flour, and sifted flour in a saucepan. Stir, then gradually whisk in the milk. Cook over low heat, stirring constantly, until boiling or until the cream thickens. Transfer the cream to a bowl, cover with plastic wrap, and let cool completely.
2. Wash the peaches and cut them into thin slices, then sauté them in a pan with a little water for 4-5 minutes to soften them, then let them cool. Now assemble the tart: pour the coconut cream into the cooled pastry shell and smooth it out with a spoon, then decorate the tart with the peach slices and blueberries. Dilute the jam with a tablespoon of water and brush it over the fruit to glaze it, then serve your tart cut into slices.
