Pasta con cime di rapa: sapori decisi e genuini della cucina del Sud, tra note amarognole e profumo d’aglio. Un classico che non delude mai.
Ingredients
- Turnip tops150 g
- Durum wheat pasta100 g
- Anchovies in oil25 g
- Parmigiano Reggiano DOP25 g
- Garlic1 clove
- Fine saltto taste
- Extra virgin olive oilto taste
Procedure
0. Wash and thinly slice the turnip tops. Meanwhile, bring a pot of water to a boil.
1. Brown the turnip tops in a pan with a clove of garlic and a few anchovies
2. Throw the pasta into the pot as soon as the water boils.
3. Cook the turnip tops, adding a ladle of the cooking water. Once the pasta is cooked, remove the garlic clove and add the pasta to the turnip tops in the pan.
4. Sauté with grated cheese off the heat and serve (you can add a pinch of pepper if you like)
