  • 0. In a large skillet, heat a drizzle of oil and sauté the Tropea onion over low heat for 5-7 minutes, until soft and sweet. Add a pinch of salt to help release moisture.
  • 1. Add the desalted capers and Taggiasca olives. Cook for 2 minutes, adding a touch of chili pepper if you like it spicy.
  • 2. Add the tomato puree, season with salt and pepper, and cook over low heat for about 10-12 minutes, stirring occasionally. When cooked, the sauce should be thick and fragrant.
  • 3. Add the halved cherry tomatoes and cook for another 2-3 minutes, just long enough for them to soften without falling apart. Turn off the heat.
  • 4. Drain the tuna fillets lightly and add them to the sauce off the heat, roughly breaking them up. This will help them retain their texture and aroma.
  • 5. Cook the pasta al dente in plenty of salted water. Drain and toss it in the pan with the sauce for 1-2 minutes, adding a splash of the pasta cooking water if necessary.
  • 6. Serve with a drizzle of raw oil, chopped fresh parsley and, if you want an extra touch, grated lemon zest or toasted breadcrumbs for crunchiness.
