Ingredients
- Durum wheat pasta180 g
- Tomato puree120 ml
- Tuna in oil120 g
- Red onion30 g
- Taggiasca olives10 g
- Cherry tomato6 u (120 g)
- Capers in salt1 tablespoon
- Fine saltto taste
- Extra virgin olive oilto taste
- Chili pepperto taste
Procedure
0. In a large skillet, heat a drizzle of oil and sauté the Tropea onion over low heat for 5-7 minutes, until soft and sweet. Add a pinch of salt to help release moisture.
1. Add the desalted capers and Taggiasca olives. Cook for 2 minutes, adding a touch of chili pepper if you like it spicy.
2. Add the tomato puree, season with salt and pepper, and cook over low heat for about 10-12 minutes, stirring occasionally. When cooked, the sauce should be thick and fragrant.
3. Add the halved cherry tomatoes and cook for another 2-3 minutes, just long enough for them to soften without falling apart. Turn off the heat.
4. Drain the tuna fillets lightly and add them to the sauce off the heat, roughly breaking them up. This will help them retain their texture and aroma.
5. Cook the pasta al dente in plenty of salted water. Drain and toss it in the pan with the sauce for 1-2 minutes, adding a splash of the pasta cooking water if necessary.
6. Serve with a drizzle of raw oil, chopped fresh parsley and, if you want an extra touch, grated lemon zest or toasted breadcrumbs for crunchiness.
