Pasta con i lupini di mare: un tuffo nel sapore intenso del mare, dove la pasta avvolge la dolcezza e la freschezza dei lupini in un abbraccio perfetto!
Ingredients
- Warty venus clams350 g
- Durum wheat pasta200 g
- Cherry tomato125 g
- White wine100 ml
- Extra virgin olive oil2 tablespoons
- Lemon1 u (85 g)
- Garlic1 clove
- Parsleyto taste
Procedure
0. Rinse the sea clams under running water. Place them in a bowl of salted water for an hour to purge them of sand. Rinse the sea clams again under running water.
1. In a large skillet, heat a little extra virgin olive oil and add the crushed garlic cloves and chili pepper (if using). Add the sea clams and deglaze with the white wine. Cover with a lid and cook over medium heat until the clams open (about 5-7 minutes). Discard any that remain closed.
2. Halve the cherry tomatoes. Heat a little extra virgin olive oil in a pan and add the cherry tomatoes. Cook for about 5 minutes until the tomatoes begin to soften. Add the cooked sea wolfberries (reserve a few shells for garnish) and their strained cooking liquid. Stir and season with salt and pepper.
3. Cook the pasta in plenty of salted water according to the package instructions. Drain the pasta al dente, reserving a little of the cooking water.
4. Add the pasta to the pan with the lupini beans and cherry tomatoes. Toss well, adding a little of the cooking water if necessary to combine everything. Sprinkle with chopped fresh parsley and a drizzle of extra virgin olive oil.
