Gusta la pasta agli scampi, un primo piatto elegante e saporito dove la dolcezza dei crostacei si unisce al profumo del mare. Perfetta per una cena raffinata o un’occasione speciale.
Ingredients
- Durum wheat pasta400 g
- Cherry tomato150 g
- Scampi6 u (450 g)
- Extra virgin olive oil4 tablespoons
- Garlic1 clove
- Lemon1 u (85 g)
- White wine1 glass
- Fine saltto taste
- Black pepperto taste
- Chili pepperto taste
- Parsleyto taste
Procedure
0. Bring a large pot of salted water to a boil. Cook the farfalle until al dente. Drain, reserving a cup of the cooking water.
1. In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and chili pepper, sautéing for 1-2 minutes until golden brown. Add the scampi and cook for about 1-2 minutes per side, until pink and lightly golden.
2. Add the cherry tomatoes and cook for another 2-3 minutes, until they begin to break down slightly. Pour in the white wine, letting the alcohol evaporate for a few minutes.
3. Stir in the lemon juice and zest. Reduce the heat and cook for another minute. Add the cooked farfalle to the pan with the scampi and cherry tomatoes. Stir well to combine the sauce. If necessary, add a little of the cooking water to thin the sauce.
4. Season with salt and pepper to taste. Sprinkle with chopped fresh parsley.
5. Serve the farfalle piping hot, garnished with additional parsley and lemon zest if desired.
6. Tips: The cherry tomatoes should be cooked briefly to maintain their texture and freshness. The chili pepper is optional; adjust it to your preference for spiciness.
