Pasta alla zozzona cremosa e ricca, con pancetta, pomodoro e formaggi. Un primo piatto gustoso e avvolgente, perfetto per gli amanti dei sapori decisi.
Ingredients
- Durum wheat pasta360 g
- Peeled tomatoes350 g
- Fresh sausage250 g
- Pork cheek200 g
- Red onion150 g
- Egg yolk83 u (1411 g)
- Pecorino20 g
- Black pepperto taste
- Extra virgin olive oilto taste
- Fine saltto taste
Procedure
0. To make the pasta alla zozzona, first finely chop the onion and sauté it gently in a saucepan with the oil. Once it's translucent, add the sausage, removed from its casing and separated into small pieces, along with the guanciale. Sauté until the sausage changes color.
1. Add the canned cherry tomatoes, season with salt and pepper, and reduce the sauce, covered, for about 15-20 minutes. Meanwhile, in a bowl, whisk the egg yolks with a pinch of salt, a pinch of pepper, and the grated pecorino. You should obtain a thick cream.
2. Cook the pasta, drain it al dente, and add it to the pan with the sauce. Remove from the heat, stir in the egg yolk mixture, stirring in a little of the rigatoni cooking water if necessary. Toss and transfer to serving plates. Serve the pasta alla zozzona with additional grated Pecorino Romano, if desired.
