Questo piatto combina la dolcezza dei pomodorini con la sapidità della feta e il profumo del basilico, il tutto su una base di pasta integrale che lo rende più nutriente. È perfetto per un pasto estivo leggero ma soddisfacente.
Ingredients
- Whole spelt pasta400 g
- Cherry tomato250 g
- Feta200 g
- Extra virgin olive oil4 tablespoons
- Garlic1 clove
- Black pepperto taste
- Fine saltto taste
- Basilto taste
Procedure
0. Wash the cherry tomatoes and cut them in half. Wash and dry the basil leaves. Tear them off with your hands or roughly chop them with a knife.
1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta, reserving a cup of the cooking water.
2. While the pasta is cooking, heat the oil in a large skillet over medium heat. Add the sliced garlic and cook until golden, about 1-2 minutes. Add the chopped cherry tomatoes, salt, and pepper.
3. Cook for 5-8 minutes until the tomatoes begin to break down and release their juices. If the sauce seems too dry, add a little of the pasta cooking water to make it creamier.
4. Add the cooked pasta to the pan with the cherry tomatoes. Stir well to coat the pasta with the sauce. Remove the pan from the heat and add the crumbled feta and basil. Stir gently to combine.
5. Make sure the pasta is well-seasoned and creamy. If necessary, add a little more cooking water. Serve the pasta hot, with an additional sprinkling of feta and fresh basil, if desired.
