La pasta alla #Nerano è un classico della cucina napoletana, un piatto ricco e cremoso a base di #zucchine e formaggio. In questa versione #fitness, abbiamo alleggerito il piatto mantenendo la sua bontà ma con ingredienti più leggeri e un tocco di freschezza grazie al limone e al pepe.
Ingredients
- Durum wheat pasta160 g
- Parmigiano Reggiano DOP50 g
- Zucchini2 u (400 g)
- Extra virgin olive oil1 teaspoon
- Black pepperto taste
- Lemon zestto taste
Procedure
0. Wash and cut the zucchini in half. Dice one half and sauté in a pan with a splash of water and a pinch of salt for 5-7 minutes, until soft and creamy. Slice the other half into thin rounds and cook in a nonstick pan with a drizzle of extra virgin olive oil. Cook for about 5-7 minutes, until lightly golden and toasted.
1. Bring a pot of salted water to a boil and cook the pasta according to the package instructions, draining it al dente.

2. In a large skillet, combine the drained pasta and sautéed zucchini. Add some of the roasted zucchini for a crunchy touch. Add the grated cheese and a little of the pasta cooking water to create a light, creamy sauce.
3. Grate the lemon zest directly onto the plate and add black pepper to taste. Stir well to combine all the flavors. Serve and garnish with additional grated cheese (optional) and a few roasted zucchini slices.
