La paparot è una zuppa tradizionale del Friuli, a base di spinaci e polenta. Ecco come prepararla utilizzando un robot da cucina per facilitare il processo.
Ingredients
- Vegetable broth1 L
- Fresh spinach600 g
- Yellow polenta150 g
- White onion1 u (150 g)
- Garlic1 clove
- Extra virgin olive oilto taste
- Fine saltto taste
- Black pepperto taste
Procedure
0. Preparing the vegetables: Clean the spinach, removing the tough parts. If using a food processor, you can coarsely chop the leafy greens. Chop the onion and garlic using the food processor.
1. Cooking: In a large saucepan, heat a drizzle of oil and sauté the chopped onion and garlic until translucent. Add the chopped spinach and cook for a few minutes until reduced. Pour in the vegetable broth and bring to a boil.
2. Making the polenta: Once boiling, slowly add the instant polenta, stirring constantly with a whisk or a food processor set to low speed to avoid lumps. Simmer for about 10 minutes, stirring constantly until the polenta thickens.
3. Finishing: Taste and season with salt and pepper. Let the soup rest for a few minutes before serving to allow the flavors to meld.
4. Serving suggestion: Serve the paparot hot, perhaps with a drizzle of extra virgin olive oil and a sprinkling of grated cheese, if desired.
5. Tips: The consistency of the soup can vary depending on personal taste; add more broth for a thinner soup, or less for a thicker consistency. This soup is also excellent the next day, when the flavors have had a chance to meld further.
