  • 0. Peel the potatoes and cut them into sticks about 1 cm thick. Rinse them under cold water and then soak them for 10 minutes (this removes the starch and makes them crispier). Dry them thoroughly with a kitchen towel.
  • 1. In a large nonstick skillet, heat the oil and butter over medium heat. Add the unpeeled crushed garlic clove and the sage leaves. After 1 minute, add the potatoes in a single layer (do not crowd them). Cover and cook for about 15-18 minutes, turning occasionally. They should soften and brown but not burn.
  • 2. Remove the lid, raise the heat, and sauté the potatoes for the last 5 minutes, until golden brown. Remove the garlic, season with salt, and (if desired) a little ground black pepper.
