  • 0. Start by washing and finely chopping the zucchini, peppers, and garlic. Add the vegetables and a tablespoon of vegetable oil to a wok or pan. Add a pinch of salt and a little parsley and cook over low heat with a lid.
  • 1. Meanwhile, in a bowl, roughly chop the tofu and add the vinegar, soy sauce, and a tablespoon of sesame seeds. Let it marinate for a while. Once the vegetables are soft, remove the lid and sauté them over high heat.
  • 2. Once the vegetables are cooked, set them aside. In the same pan, toast the tofu over high heat, adding a drizzle of vegetable oil. When it starts to crisp, add the roughly chopped peanuts. Meanwhile, cook the spaghetti according to its cooking time.
  • 3. Once the tofu is crispy, turn off the heat. Combine all the ingredients in a bowl and season with a little lime! Enjoy!
