Ingredients
- Semolina noodles250 g
- Tofu125 g
- Roasted peanuts25 g
- Zucchini1 u (200 g)
- Extra virgin olive oil1 tablespoon
- Garlic1 clove
- Lime1 u (50 g)
- Bell pepper1 u (220 g)
- Soy sauce1 tablespoon
- Sesame seedsto taste
- Vegetable oilto taste
- Parsleyto taste
Procedure
0. Start by washing and finely chopping the zucchini, peppers, and garlic. Add the vegetables and a tablespoon of vegetable oil to a wok or pan. Add a pinch of salt and a little parsley and cook over low heat with a lid.
1. Meanwhile, in a bowl, roughly chop the tofu and add the vinegar, soy sauce, and a tablespoon of sesame seeds. Let it marinate for a while. Once the vegetables are soft, remove the lid and sauté them over high heat.
2. Once the vegetables are cooked, set them aside. In the same pan, toast the tofu over high heat, adding a drizzle of vegetable oil. When it starts to crisp, add the roughly chopped peanuts. Meanwhile, cook the spaghetti according to its cooking time.
3. Once the tofu is crispy, turn off the heat. Combine all the ingredients in a bowl and season with a little lime! Enjoy!
