Il pad thai, phat thai o phad thai è un piatto della cucina thailandese a base di pasta di riso fritta al salto in padella con alimenti vari, come ad esempio uovo, salsa di pesce, peperoncino, verdure, arachidi, germogli di soia, gamberi e pollo o tofu.
Ingredients
- Rice noodles500 g
- Chicken breast300 g
- Prawns300 g
- Carrots240 g
- Spring onion240 g
- Tofu200 g
- Soybean sprouts200 g
- Golden onion150 g
- Roasted peanuts60 g
- Extra virgin olive oil40 ml
- Soy sauce25 ml
- Thai fish sauce25 ml
- Tamarind juice20 ml
- Eggs4 u (240 g)
- Garlic3 cloves
- Chili pepperto taste
Procedure
0. Ingredients: Beat the eggs, then season with salt and pepper. Cook them in a pan with a little oil and scramble them. Chop the peanuts with a knife. Wash the shrimp, remove the shells and black intestines, then season them with a squeeze of lime, oil, and pepper. Cut the chicken into small pieces. Cut the tofu into similar-sized pieces. Fry the tofu in a little oil until crispy. Wash the leeks and spring onions and slice them. Cut the carrots into julienne strips. Heat a pot of water, cook the fettuccine, and turn off the heat.
1. Stir-fry all the ingredients together: Take a wok, pour in a generous drizzle of oil and sauté the minced garlic for a few minutes. Add the carrot strips, leek, shrimp, and chicken and cook for a couple of minutes. Then add the rice noodles, season with soy sauce, fish sauce, chili pepper, and tamarind, and cook for 3 minutes. Now add the scrambled eggs. Now add the spring onions and bean sprouts, stir-fry, and cook for 1 minute.
2. Serve: Sprinkle with peanuts, drizzle with lime juice, plate and serve.
