- Tomato puree250 ml
- Borlotti beans (precooked)240 g
- Durum wheat pasta200 g
- Minestrone200 g
- Extra virgin olive oil4 tablespoons
- Garlic1 clove
- Fine saltto taste
- Chili pepperto taste
- Parmigiano Reggiano DOPto taste
Procedure
0. In a pan, combine a drizzle of oil and the minestrone. Cook with a crushed garlic clove. Add the beans, salt, bay leaves, and tomato puree. You can also add chili pepper if you like.
1. Meanwhile, bring water to a boil for the pasta. Cook the pasta for the cooking time. Once cooked, toss it in the pan with some Parmesan cheese. For a more intense flavor, add a teaspoon of extra virgin olive oil.
