  • 0. In a bowl, combine the oat flour and salt. Add the egg and mix well. Gradually add the milk, stirring constantly to avoid lumps, until you have a smooth batter.
  • 1. Heat a nonstick pan and grease it with a little oil or butter. Pour a ladleful of batter into the hot pan and tilt the pan to distribute the batter evenly. Cook for about 2 minutes, or until the edges pull away easily, then flip the crepe and cook for another 1-2 minutes. Repeat until all the batter is used.
  • 2. Cut the zucchini into thin lengthwise slices. Brush the zucchini slices with olive oil and grill them on a hot griddle or grill until soft and lightly charred. Halve or quarter the cherry tomatoes. In a bowl, lightly mash the stracchino cheese with a fork to make it more spreadable.
  • 3. Spread a layer of stracchino cheese on each crepe. Arrange the grilled zucchini and cherry tomatoes on top of the stracchino cheese. Season with a pinch of salt, pepper, and chopped fresh herbs. Fold the crepes in half or roll them up. Serve the crepes warm, allowing the stracchino cheese to become deliciously stringy.
