Ingredients
- Chicken broth500 ml
- Chicken breast400 g
- Soybean noodles300 g
- Coconut milk200 ml
- Frozen peas100 g
- Spring onion50 g
- Garlic2 cloves
- Vegetable oil2 tablespoons
- Ginger1 teaspoon
- Curry1 teaspoon
- Turmeric1 teaspoon
- Bell pepper1 u (220 g)
- Chili pepperto taste
- Fine saltto taste
- Black pepperto taste
Procedure
0. In a bowl, mix the chicken cubes with a pinch of salt, pepper, and a teaspoon of curry powder. Let rest for 10 minutes.
1. In a large pot, heat the vegetable oil over medium heat. Add the garlic and grated ginger, sautéing lightly to release their aroma.
2. Add the chicken cubes to the pot and sauté until golden brown.
3. Pour the coconut milk and chicken broth into the pot. Add the curry powder and turmeric, stirring well. Bring to a boil, then reduce the heat and simmer for about 10 minutes.
4. Add the peas and bell pepper strips. Cook for another 5-7 minutes, until the vegetables are tender.
5. Cook the rice vermicelli according to the package instructions (usually 3-5 minutes in boiling water). Drain and set aside.
6. Add the noodles directly to the soup or divide them among the bowls and pour the soup over them. Garnish with fresh spring onions and, if desired, fresh chili pepper rings.
