Ingredients
- Water330 ml
- Sushi rice250 g
- Prawns150 g
- Tuna fillets150 g
- Salmon150 g
- Rice vinegar50 ml
- Granulated sugar15 g
- Fine salt5 g
- Nori seaweedto taste
Procedure
0. Rinse the rice under running water until the water runs clear. This removes excess starch, making the rice firmer.
1. Place it in a pot with water and let it steep for 30 minutes. Then cook it over medium heat until it boils, reduce the heat and cover with a lid for 10 minutes. Turn off the heat and let it steep for another 10 minutes, uncovered.
2. Meanwhile, gently heat the rice vinegar, sugar, and salt until dissolved. Pour the rice into a Hangiri (or a large bowl), season with the vinegar mixture, and stir gently with a wooden spatula. Cover with a damp cloth and let cool.
3. Cutting the fish. Use a sharp knife (yanagiba, if available). Cut slices 5-6 cm long, 2-3 cm wide, and about 5 mm thick. Make a diagonal cut at a 45° angle to obtain a wide, smooth surface, making it easier to stick to the rice.
4. Shell the shrimp, leaving the tails intact. Make a slit along the belly and remove the intestinal tract. Blanch them in water for 30 seconds, then cool them in ice water. Open them like a book, cutting along the back to flatten them.
5. Lightly moisten your hands with water and a pinch of vinegar to prevent the rice from sticking. Take a small amount of rice (about 15-18 g) and shape it into a firm oval. Spread a pinch of wasabi on the fish slice.
6. Place the fish on the rice and press gently with your fingers to adhere. For the shrimp, place them open on top of the rice and press lightly.
7. Nigiri with nori seaweed: For some more delicate fish (e.g., eel or Japanese omelette), you can wrap a thin ribbon of nori seaweed around the nigiri to stabilize it.
8. Pairings: Serve nigiri with quality soy sauce, wasabi, and pickled ginger to cleanse the palate between bites.
9. Alternatives to raw fish: You can use grilled eel (unagi), fish roe (ikura), or marinated tofu for a vegetarian version.
