- Spreadable cheese500 g
- Dry biscuits200 g
- Butter150 g
- Granulated sugar100 g
- Fresh cream100 ml
- Blackberries50 g
- Blueberries50 g
- Powdered sugar20 g
- Eggs2 u (120 g)
- Vanillin powder1 u
- Lemon1 u (85 g)
Procedure
0. For the crust: Blend the biscuits together with the melted butter and mix until smooth. Once the mixture is smooth, spread it out in a round cake pan lined with parchment paper and create the base of your cheesecake. Let it rest in the refrigerator for half an hour.
1. In a bowl, combine the eggs, sugar, and vanilla. Add the juice of half a lemon and mix until smooth. Add the cream cheese and cream. If desired, use an electric whisk to whip the ingredients evenly.
2. Pour the mixture onto the bottom of the biscuits and bake for an hour at 160°C.
3. For the cream: Chop the berries into small pieces and add them to a small saucepan with the powdered sugar. Once they have softened and become a jam, turn off the heat. Let the cake cool and then add the berry jam. Let it rest in the refrigerator for two hours.
