Prepara un risotto ai funghi semplice e cremoso, perfetto per un pranzo o una cena veloce ma ricca di sapore. Un classico intramontabile della cucina italiana.
Ingredients
- Vegetable broth500 ml
- Sautéed mushrooms200 g
- Carnaroli rice200 g
- White wine100 ml
- Parmigiano Reggiano DOP50 g
- Butter30 g
- Extra virgin olive oil15 ml
- Fine saltto taste
- Black pepperto taste
Procedure
0. In a saucepan, cook the mushrooms over medium heat with two tablespoons of oil (15 ml) until they release all their moisture. Heat another dry saucepan without oil until it's hot. Then add the rice, reducing the heat so it doesn't burn.
1. When the rice begins to become translucent, add the mushrooms and stir well. After a few minutes, deglaze with the white wine. Once the alcohol smell has dissipated, add a ladle of broth, previously brought to a boil. Cover and check occasionally that there is still a thin layer of broth, adding more if necessary and stirring thoroughly. It's important to add the broth little by little and avoid completely submerging the rice.
2. Once the rice has reached the desired consistency, turn off the heat, add the diced butter, and mix thoroughly. Then, cover and let it rest for at least a minute. Finally, add the grated Parmesan cheese and mix thoroughly. Cover again and let it rest for another minute.
