  • 0. In a small saucepan, bring the water, butter, and salt to a boil. Once the butter has completely melted and the water begins to boil, remove the saucepan from the heat and add all the flour at once.
  • 1. Stir vigorously with a wooden spoon until the dough pulls away from the sides of the pan and forms a compact ball. Return the pan to the heat for about 1 minute, stirring continuously to dry the dough.
  • 2. Let the mixture cool for a few minutes, then add the eggs, one at a time, mixing well until the mixture is smooth and glossy. If desired, add a pinch of pepper or other spices for extra flavor.
  • 3. Preheat the oven to 200°C. Transfer the dough into a piping bag with a smooth nozzle and form small mounds of dough on a baking sheet lined with baking paper, spacing them well apart. You can give them a slightly more elongated or round shape, depending on your preference.
  • 4. Bake the rolls for 10 minutes at 200°C, then lower the temperature to 180°C and bake for another 15-20 minutes, until they are golden brown and crispy on the outside. Turn off the oven, leave the door ajar and let the rolls cool inside to prevent them from collapsing.
  • 5. Once cooled, cut the rolls in half and fill them with your favorite savoury ingredients, such as cream cheese, ham, smoked salmon, grilled vegetables or a drizzle of butter and jam for a sweet-savoury contrast.
