  • 0. Using a large-hole grater, grate the zucchini and remove any excess water. Transfer the zucchini to a bowl and add the ground beef, egg, Parmesan cheese, and all the herbs. Season with salt and pepper. Mix the ingredients by hand and, depending on the moisture level, add 2 or 3 tablespoons of breadcrumbs.
  • 1. Shape the meatballs and coat them in breadcrumbs. Place the meatballs in the air fryer and drizzle with oil—I recommend using spray olive oil. Cook for 15 minutes at 180°C, turning the meatballs for even cooking, and finish cooking for 5-7 minutes at 200°C.
