  • 0. Dissolve the yeast and sugar in the warm water. Let it rest for 5 minutes. Place the Manitoba flour in a large bowl, then pour in the water with the yeast and begin kneading. Add the salt and finally the oil, continuing to knead until the dough is smooth and elastic (about 10 minutes by hand or 6-7 with a mixer).
  • 1. Cover and let rise in a warm place for 3 hours. After the first rise, divide the dough into 2 balls, cover, and let rise for another hour.
  • 2. Blanch the shrimp for 2-3 minutes in lightly salted water. Drain and let cool.
  • 3. Thinly slice the zucchini using a mandolin. Season with lemon juice and zest, chopped mint leaves, salt, pepper, and a drizzle of olive oil. Let them rest in the refrigerator for at least 30 minutes.
  • 4. Spread the dough on a baking sheet or stone, season with the tomato sauce, a pinch of salt, oregano, and a drizzle of oil. Bake in a preheated oven at 230°C (450°F) for about 12-15 minutes, until the base is golden brown. Let cool completely. A tip: you can cook the pizza for the first 5 minutes on the bottom of the oven and then finish cooking in the center.
  • 5. Arrange the marinated shrimp and zucchini on the chilled base. Add dollops of mayonnaise using a teaspoon or a piping bag for a more elegant effect. Garnish with a few mint leaves and a sprinkle of freshly grated lemon zest.
