  • 0. Dissolve the Yeast: Dissolve the fresh yeast in the warm water and add the sugar. Let it sit for 10 minutes until frothy.
  • 1. Knead: In a large bowl, combine the flour and yeast mixture. Add the vegetable oil and knead until smooth and elastic. If the dough is too sticky, add a little flour; if it's too dry, add a little water.
  • 2. First rising: Cover the dough with a damp cloth and let it rise in a warm place for about 1-2 hours, or until doubled in volume.
  • 3. Shape the mantou: After the dough has risen, divide it into small portions (about 50 g each). Shape into balls or cylinders, depending on your preferred shape.
  • 4. Second rising: Arrange the mantou on baking paper, cover them with a damp cloth and let them rise for another 30 minutes.
  • 5. Steaming: Bring water to a boil in a steamer. Arrange the mantou, leaving space between them, as they will expand during cooking. Steam for about 15 minutes.
  • 6. Serving: The mantou are ready when they're puffed up and soft. Serve them hot, plain or with your choice of toppings.
