Le madeleine sono uno dei dolci più #iconici della pasticceria francese, piccole #delizie a forma di conchiglia, morbide e fragranti. Perfette per accompagnare un tè o un caffè, le madeleine sono semplici da preparare ma richiedono attenzione ai dettagli per ottenere la giusta consistenza e il classico “effetto incavo” che le rende così irresistibili. Ecco la ricetta perfetta per realizzare delle madeleine classiche e soffici!
Ingredients
- Type 00 flour150 g
- Granulated sugar130 g
- Butter120 g
- Eggs2 u (120 g)
- Vanilla extract1 teaspoon
- Baking powder1 teaspoon
- Honey1 tablespoon
- Lemon zestto taste
- Fine saltto taste
Procedure
0. Start by preheating the oven to 180°C (conventional) and grease the madeleine mold well, or coat it with baking spray. Melt the butter in a saucepan over low heat or in the microwave and let it cool. It's important that the butter isn't too hot when you add it to the batter.
1. Grate the zest of a lemon, being careful not to take the bitter white pith. If using a vanilla bean, crack it open and scrape out the seeds with a knife.
2. In a large bowl, beat the eggs, sugar, and a pinch of salt until light and fluffy. You can use an electric whisk to speed up the process. The mixture should be fluffy and pale in color.
3. In another bowl, sift together the flour and baking powder. Gradually add the sifted flour to the egg and sugar mixture, stirring gently with a spatula to avoid deflating the mixture.
4. Pour the melted, warmed butter into the mixture, stirring gently until smooth. Add the grated lemon zest, vanilla bean seeds (or extract), and, if desired, honey. Stir to evenly distribute the flavors.
5. Cover the bowl with plastic wrap and let the dough rest in the refrigerator for at least 30 minutes. This step is crucial for achieving the typical "shell" shape of madeleines, as the rest will help the dough firm up.
6. After resting, divide the batter into madeleine molds, filling them about 2/3 full. Bake in a preheated oven at 180°C (350°F) for about 10-12 minutes, or until the madeleines are golden brown on top and puffed up. The typical shell shape should be clearly visible. If you don't have a madeleine mold, you can use a muffin tin, but the result will be a different shape.
7. Once baked, remove the madeleines from the oven and let them rest in the pan for a few minutes. Carefully unmold them and let them cool on a wire rack. If desired, you can dust the madeleines with powdered sugar for an elegant finish. Add some chocolate chips for a more indulgent twist.
