Il Lomo Saltado è un viaggio nei sapori intensi della fusione peruviano-cinese. Ogni boccone è un'esperienza: il manzo succulento e perfettamente rosolato, le cipolle croccanti e caramellate, e i pomodori succosi si fondono con il riso soffice e le patate dorate. Ingredients
- Lean beef fillet500 g
- Red wine vinegar25 ml
- Vegetable oil3 tablespoons
- Soy sauce2 tablespoons
- Garlic2 cloves
- Cluster tomato2 u (400 g)
- Red onion1 u (150 g)
- Chili pepperto taste
Procedure
0. Cut the beef tenderloin into strips about 1 cm thick and season with salt, pepper, and a little soy sauce. Let rest for about 10 minutes.
1. In a large skillet or wok, heat the vegetable oil over high heat. Add the meat and quickly sauté for about 3-4 minutes, until golden brown on the outside but tender on the inside. Set the meat aside.
2. In the same pan, add the onion and garlic and sauté for about 2 minutes, until the onion is translucent. Add the tomatoes and chili pepper and continue cooking for another 2 minutes, maintaining a light crunch.
3. Add the soy sauce, red wine vinegar, and, if using, oyster sauce. Stir well and cook for another minute, allowing the flavors to meld.
4. Return the meat to the pan with the vegetables and quickly stir everything together. Season with salt and pepper if necessary. Add a sprinkling of fresh parsley for a touch of freshness.
5. Serve the Lomo Saltado hot, accompanied with white rice and French fries on the side. You can garnish with fresh chili pepper slices and parsley for a visually appealing effect.
