  • 0. Cut the beef tenderloin into strips about 1 cm thick and season with salt, pepper, and a little soy sauce. Let rest for about 10 minutes.
  • 1. In a large skillet or wok, heat the vegetable oil over high heat. Add the meat and quickly sauté for about 3-4 minutes, until golden brown on the outside but tender on the inside. Set the meat aside.
  • 2. In the same pan, add the onion and garlic and sauté for about 2 minutes, until the onion is translucent. Add the tomatoes and chili pepper and continue cooking for another 2 minutes, maintaining a light crunch.
  • 3. Add the soy sauce, red wine vinegar, and, if using, oyster sauce. Stir well and cook for another minute, allowing the flavors to meld.
  • 4. Return the meat to the pan with the vegetables and quickly stir everything together. Season with salt and pepper if necessary. Add a sprinkling of fresh parsley for a touch of freshness.
  • 5. Serve the Lomo Saltado hot, accompanied with white rice and French fries on the side. You can garnish with fresh chili pepper slices and parsley for a visually appealing effect.
