  • 0. Gently rinse the red mullet under cold running water to remove any surface impurities. Use the back of a knife (or a fish scaler) and, starting from the tail and working toward the head, scrape away the scales with gentle strokes. Be careful not to break the skin.
  • 1. Using kitchen scissors, make an incision along the belly of the fish, starting from the base of the head to the tail. Gently remove the viscera with your fingers or the tips of the scissors.
  • 2. Thoroughly wash the insides of the red mullets to remove any residue. Pat dry with paper towels and set aside.
  • 3. In a large skillet, heat 2 tablespoons of extra virgin olive oil with the lightly crushed garlic. Add the desalted capers and cook for 1 minute, stirring to distribute the flavor. Add the peeled tomatoes (chopped by hand) or the cherry tomatoes cut in half.
  • 4. Add salt, pepper, and oregano, then cook over medium heat for 10 minutes, stirring occasionally, until the sauce thickens slightly.
  • 5. Carefully arrange the red mullet in the sauce, trying not to overlap. Cover the pan with a lid and cook over low heat for about 4-5 minutes. Using a wide spatula, carefully turn the red mullet and continue cooking for another 4-5 minutes.
  • 6. Transfer the red mullet to plates, spooning a few spoonfuls of sauce over them. Sprinkle with chopped fresh parsley and drizzle with extra virgin olive oil.
  • 7. Serve the red mullet with slices of toasted bread, perfect for soaking up the delicious sauce. A simple yet refined dish, encapsulating all the aromas and flavors of Mediterranean tradition!
