Ingredients
- Pumpkin400 g
- Durum wheat pasta320 g
- Ground beef200 g
- Salted ricotta100 g
- Smoked bacon50 g
- Ground cinnamon1 teaspoon
- Fine saltto taste
- Chili pepperto taste
Procedure
0. Peel and dice the pumpkin. In a pan, sauté the chopped onion and garlic with a little oil. Add the pumpkin and a pinch of salt. Cook over medium heat for about 15 minutes, adding a little water if necessary, until the pumpkin is tender.
1. Once cooked, blend the pumpkin with a pinch of cinnamon and a little chili pepper, creating a smooth cream.
2. In another pan, cook the ground beef with a drizzle of oil, salt, and pepper. Brown until golden and cooked through.
3. Arrange the pancetta slices in a nonstick pan without adding oil. Cook over medium-high heat until crispy and golden brown on both sides. Turn the slices halfway through cooking for even browning. Drain the pancetta on paper towels to remove excess fat.
4. Cook the pasta in plenty of salted water according to the package directions. Drain al dente, reserving a little of the cooking water.
5. Add the pasta to the pumpkin puree and mix well. Add the ground beef and, if necessary, a little of the cooking water to further combine. Garnish with the crispy pancetta and a generous sprinkling of salted ricotta.
