  • 0. Peel and dice the pumpkin. In a pan, sauté the chopped onion and garlic with a little oil. Add the pumpkin and a pinch of salt. Cook over medium heat for about 15 minutes, adding a little water if necessary, until the pumpkin is tender.
  • 1. Once cooked, blend the pumpkin with a pinch of cinnamon and a little chili pepper, creating a smooth cream.
  • 2. In another pan, cook the ground beef with a drizzle of oil, salt, and pepper. Brown until golden and cooked through.
  • 3. Arrange the pancetta slices in a nonstick pan without adding oil. Cook over medium-high heat until crispy and golden brown on both sides. Turn the slices halfway through cooking for even browning. Drain the pancetta on paper towels to remove excess fat.
  • 4. Cook the pasta in plenty of salted water according to the package directions. Drain al dente, reserving a little of the cooking water.
  • 5. Add the pasta to the pumpkin puree and mix well. Add the ground beef and, if necessary, a little of the cooking water to further combine. Garnish with the crispy pancetta and a generous sprinkling of salted ricotta.
